Ted -

I think it makes a huge difference in whether or not you are able to
capture the photo that you see when you know what aperture and shutter
speed you should be using and which lens is appropriate for your vision.
 Studying the EXIF information from past photos can be a great help in
learning all of that.

In LR you can sort photos by any sort of metadata like lens used, shutter
speed, aperture, ISO and then compare them.  It also helps greatly when you
are preparing talks and want to illustrate what a particular lens can do.
 LR can pick out from the EXIF every photo you have ever made with that
lens.

So, yes, the camera EXIF is important when you are still learning, maybe
not so much when you have been photographing long enough that it is all
second-nature and you never even have to think about it.  You are using the
EXIF stored in your brain  ;-)
