Along the line of complexity, rather than just sheer heat, my brother's
Cambodian significant other taught me to make a great sauce that replaces
the usual dipping sauce for goi cuon.  She roasts raw peanuts in a pan, pops
them in a food processor with about a half dozen cloves of garlic, and
mashes this mixture into the contents of a small jar of bean curd preserved
in chili.  Just wonderful.
