Your curry looks like anything we may make at home - pretty authentic!
In the South of India, "curry" or "kari" denotes a dish without gravy, a
dry dish, either of vegetables, meat or a combination, lightly tempered
with spices. Remember that "Spicy" is not the equivalent of "Chilly Hot",
they are two entirely different flavour profiles. To the world,
unfortunately, Indian Cuisine denotes the Punjabi/North West Frontier type,
with everything overcooked, floating in oil and drenched in red chili and
spices. I will not even mention the unspeakable and thoroughly uneatable
Chicken Tikka Masala, an abomination, if ever there was one in the name of
Indian food!
You should try cooking South Indian food, which tends to be much lighter,
steamed more often than fried, and much healthier. Of course all this has
evolved as a function of the weather and local availability of ingredients.
