Yes that's how it works as film speeds get faster the emulsions gets
thicker.  A slower thinner film speed is going to be sharper.
But the 400 films of the 90's match closely the look in terms of grain and
sharpness the 100 speed films of the mid to late 70s when I first started
color printing. 
A Hasselblad superwide is a zone focusing guess focusing camera. You need to
be stopped down or you will miss your focus on key shots. Medium format
gives you less depth of field than 35mm format. Its where you need some
extra speed to make it better to work with and it can take the extra film
speed as its a bigger format.

I shot 100 speed films when I used my 1200 watt second Balcar strobes in my
studio and shot at f11 with the light box 15 feet from the subject.
I shot it not becuae I needed extra sharpness or grain but because there was
no point in higher film speeds.
I also used the stuff when I was shooting land or cityscapes with a tripod.
But never hand held. And not with battery on camera strobes which would need
to be balanced against existing ambient light.
