Now that I work in Lightroom, I just click on "grayscale" in the Develop module and get a far superior conversion to the plain "convert to grayscale" in Photoshop. And if I want to tweak it, nothing could be easier. Want a darker sky? No problem, just slide the blue slider to the left. And so on. Lightroom is really great for B&W.
