This is an area that you have far more knowledge of than I do. To my meager knowledge, a lot of the religious wars were typical expand and conquest for power and riches masked by an excuse, this time Christianity or Islam in the West, but also Romanism vs. Protestantism at a different time. Likewise, my understanding of the spread of Catholicism in Latin America was initially all about enforcing but fairly quickly brought into a more voluntary proselytising mode.
