You build a fire in the middle of the oven and then rake it to the side. It takes a few hours to reach 900 degrees but is insulated well enough to hold the heat for a couple of days so you can cook lots of stuff - pizza at highest heat, roasts and chickens and breads and veggies after it cools a little. It has a rotisserie inside, too. I can't wait! I love to eat.
