Subject: [Leica] Deer in winter - a recipe for Bambi

Now for some closure about the deer problem. Here is a recipe featuring
venison, courtesy of Vermont's Cabot Cheese Corp. (www.cabotcheese.coop). A
delicious end for Bambi.

VENISON CHILI

1/2 lb. salt port cut into 4 pieces

2 lb. venison cut into 1" pieces.

2 medium onions, chopped.

1 clove garlic (or more), minced.

1 16 oz. can diced tomatoes.

1 16 oz. can kidney beans.*

1 cup water.

3/4 cup red wine.

2 whole green chilies, chopped.

3 tbs. chili powder.

3/4 tsp. dried oregano.

1/4 tsp. ground cumin.

Sharp cheddar cheese and sour cream as a garnish.

A keg of dark beer.

Preparation:

1. In a large heavy pot, cook salt pork until browned. Add venison, onion
and garlic stirring often until meat is browned.

2. Stir in tomatoes, water, wine, chili powder, oregano. Bring to a boil,
reduce heat and simmer for an hour. Stir frequently.

3. Remove salt pork. Serve topped with cheese and sour cream.

4. Drink beer, eat chili.

* Real chili aficionados will omit the beans.

Vermont is the state with both the highest percentage of gun ownership in
the US and the lowest rate of murders. Cause or coincidence?
