hehe, it's really  no different than egg drop soup, the broth cooks
the egg.  i have to confess that i did get a little sickly once, but i
had ordered congee with shrimp and I think the shrimp was dicey.

my producer got deathly ill once from drinking a beer with ice in it
in moradabad, india.  us gringos just can't handle indian ice.
