I've heard likewise, although I doubt it'll be successful.  I'm told 
not even alligators will willingly eat nutria, so I'd imagine not too 
terribly many Cajuns will either.

Maybe if it were listed as "traditional N'Awlins soul food" some of 
the tourists would try it, but I just doubt it'll catch on.
