One fella says "D76" the next says "Fg7"!!!!  Either of these developers can
look like anything depending on dilution and also in the case of Fg7 if you
add sulfite or not! (a big mistake in my opinion. As is using it at lower
dilutions such as 1:3.

The dilution is almost more important than the choice of developer itself.
My preference on the look of these developers would purely depend on which
one was diluted the most. I have a slight pref for Elon/Metol developers
like D76 over Phenidone Fg7 and use D76 at 1:2 instead of 1:1 for a much
sharper look at the expense of some grain. But when used straight D76 is
mush. Just about as bad ad Fg7 at 1:3.
MUSH I say!
