Ah, herring and akvavit...something to be proud of indeed for Danes. 
Having grown up in Denmark, I am obviously highly partial to this 

However, I have to say that when it comes to Matjes herring, the Dutch 
variety is hard to beat. When it is in season, I buy it from the 
fishmonger at our outdoors market every Saturday; they are nice enough 
to include finely chopped onion in a little sack. It is absolutely heavenly.
