Then, to get the sky looking correct I used a lot of correction in CS Highlight/Shadow adjustment. The sky was still a little flat so there was a curves adjustment to bring the contrast back. However, I think the grain you are seeing has more to do with the funky clouds that I put the red filter on to capture in the first place. The clouds actually looked very much like what you see in the image.
