the DOF is determined by the lens and the focal plane and F stop.  A 210
lens on a 4x5 has the same DOF as a 210 on a Leica when focused at the same
distance.  The difference is that if you want the same VIEWING FIELD, or
image, then you tend to use a smaller FL lens to get your Minox neg to give
the same image field as your 11x14 camera.  The smaller FL lens gives more
DOF than the larger.  So your end result is that your Minox Neg, with the
same image over its tiny negative has apparently more DOF than your 11x14
neg.
