For an emporium that uses a grill I request 10 seconds on one side and 10 seconds on the other then bring it out. If the server indicates that the establishment doesn't cook that way then I choose another locale. With the mad cow scare in England I suspect that there may be license issues. In other words, if the health inspector catches a piece of beef going out uncooked then you get closed down. Which was my point. If you drive your car into a Garage in Britain or Ireland (gas station) and asked for it to be filled up with gas, would you be surprised when they filled you tank with propane...?
