A friend of my parents', once ranked among the best patissiers in Bordeaux, used it but never labelled his products as « pur beurre » for obvious reasons.

The whole process is simple but sequential (rest in fridge, resume, and again and again) and consequently time-consuming - just what we need these days to keep depression at bay :-)

The most difficult part is to preserve enough chocolate as it is only used at the end of the process ;-)
