I'll be the contrarian here and say that I don't like Honey Crisp
apples. They are too sweet!!  I like tart, crisp apples.  My least
favorites are Red Delicious.  I like Rome, Winesap, Granny Smith and
the old apples on my farm, called Johnson Apples because that's the
name of the farmer who planted them.  I've canned apples, applesauce,
dried apples, and made apple cider.  This has been a great year for
apples (and pears)!
