You'll need to talk to a list serve
where the studio shooters are using
medium format digital on a daily basis

where the magazine spreads are 12 x 19
and the rear lit billboards are the size of two story buildings
it's a whole different breed than the pros on this list.
(apologies to any medium format lurkers we've not heard from)

And 11x14 does not work for fast paced fashion model photography.

Mark R did fashion work, as did I (back in the 70's and early 80's),
you're working for art directors who are working for clothing designers
who expect to see their threads (literally and accurately) rendered.
Dynamic range and micro detail is expected.
You have to be able to "feel" the fabric.

Yes. These fashion photographers are achieving
what Avedon achieved with an 8x10 - back in the 50's and 60's
and the market continues to demand that quality.

Take a look at the high end fashion, design and architecture magazines
the work is being done with very large sensors.
