I see your point. Being landlocked, days and perhaps weeks from the
coast by rail, or worse, by horse and buggy, and having no significant
airports or any reliable refrigeration systems, mountain-bound folks
here in Colorado are unable to get much of anything fresh. That's why we
only eat Star-Kist tuna and Spam. 

I wonder how all these five-star restaurants and sushi bars around here
manage? ;-)

Kit, when I lived in Denver I had a "no seafood" rule. You just can't
get fresh that far inland. This is probably due to growing up on the
coast of NC but I thought it a good rule anyway ;)
