In the better espresso machines the water for the coffee is drawn from the
"heat exchanger", which is contained within the boiler.
The water in the boiler is heated by a heating element while the exchanger,
which holds enough water for one shot or two, is heated by the hot water and
steam that surrounds it; hence the difference in temperature between steam
and water drawn for coffee.
As the water is depleted during extraction, it is automatically replaced
with cold water from either a reservoir or a direct line to the source.
