Raw egg white is usually added The Chinese rotten tofu - is a purposely deteriorated soya bean cake which develops a black skin when rotten - this is removed during cleaning leaving a whitish and dank smelling core ( the heart of the rot ) which is either steamed or fried. For the record - I enjoy both items :-) Joseph Low --- Jerry Lehrer <jerryleh@pacbell.net> wrote: > Joseph > > In Japan, it is called "natto", an acquired taste. > > Jerry > > joelct wrote: > > > Sam - as the story goes - a certain cook discovered that rotten > bean curd was delicious - and he devised a way to make fermented > bean curd after that. > > > > However - the Chinese prefer to call it rotten - to further > dramatise this dish > > > > Joseph Low > > > > --- Sam <sam@osheaven.net> wrote: > > > > > I suspected the use of "fermented" was just a dishonest > euphemism. > > > > > > Sam S > > > > > > > > > > > > joelct wrote: > > > > > > >Sam - nothing beats Chinese rotten bean curd - which is a > > > Shanghainese delicacy ( sic ) > > > > > > > >Joseph Low > > > > > > > > > > > > > > > > > > > >--- jon.stanton@comcast.net wrote: > > > > > > > > > > > > > > > >>To the least palatable foods list you might think of > including > > > >>vegimite or marmalite > > > >> > > > >> > > > >>>Any list of the most disgusting food substances know to man > must > > > >>> > > > >>> > > > >>include > > > >> > > > >> > > > >>>Hawaiian poi.
