We only need a full size sensor to utilise the full angle of view of our existing 35mm design lenses. Because chip scrap rate goes up exponentially with surface area large digital sensors will always be tens or hundreds of times more expensive than smaller sensors (however cheap they get) so a big premium will always have to be paid for the convenience of using existing lenses rather than using much cheaper, entirely adequate, sensors with lenses appropriate to them. I agree with you about the 10D but reluctantly accept that the quality is good and the 5 times bigger investment for a slightly larger chip (1Ds) is not worth it from me - so I put up with the loss of angle.
