Bourgeat.  Plus maybe a nouveau All-Clad LTD nonstick frypan, 'cause
let's face it, a nonstick surface is handy sometimes (but it's nice to
know there's stainless steel directly under there, if you have
aluminum paranoias).

If you just can't be bothered to hand-dry the Bourgeat pots' iron
handles after washing, you shouldn't buy them;  they'll get rusty, and
you'll feel guilty.  Check out some of the lower-maintenance All-Clad
lines.  And Viking has a line of cookware which includes a nice
big-ass pasta pot and steamer insert.
