If you're in France don't forget saignant - it's in-between the two. I will
guarantee that a bleu steak in France will not be cooked for the same length
of time as a bleu steak in the UK. Or perhaps that should simply read 'will
not be cooked' :-)

I have found that at least in the UK, I can get my beefsteak by ordering it
as "au point" or "bleue".  (Forgive the spelling, bitte). They know the
French words, not the American.  Strange, no?
