Not so!  The duck that we get in California is usually from
Petaluma.  Every good American or French restaurant serves
duck breast rare.  Lots of restaurants feature a dish called
"Duck Cooked Two Ways", wherein the breast is roasted
rare and the remainder is cooked well done.  I believe that
this dish was introduced by a Southern California chef
named Cindy Black, whose eponymous restaurant was in
La Jolla.

Chinese duck recipes usually call for the duck to be wok fried
well done.  Frankly, I have NEVER seen the breast of the
duck served in any Chinese restaurant.  Or at least they don't
offer it to gwai-los.
