have you tried going to corbis, magnum, etc and searching for photos of 
hands?

the other thing that comes immediately to mind is sign-language videos.  
(i realize this sounds a bit ridiculous).  that might not be too good 
because signers sign so fast and they actually communicate with the 
whole body, not just the hands, so the images probably wouldn't be too 
close up.

ooh, how about cooking shows, carpentry shows, arts-crafts shows.  
things like that.  most chefs are highly adept with their hands, as are 
carpenters, potters, cabinetmakers, etc.  "how-to" books and videos from 
the library might be good for this.

plus, shows like "this old house" and "new yankee workshop" (i think 
that's the name) are, imo, very entertaining.  it's nice to watch highly 
competent people doing what they do well, like watching michael jordan 
play basketball.
