Because they are not using photographs from space...they are
using remote sensing.  There are a whole bunch of people on
this list that can give you a definitive answer.  But,
remote sensing images can be converted to color....which is
the reality, I don't know.  (At least that is what I
remember from my remote sensing classes years ago).
