Is B&W the preferred film with a Nikon F5?, Canon EOS1n?   

The brand or make of the camera matters not. 

What matters is what you want to shoot.

Re the meter, do as you should with any new meter...do a test to 
determine its accuracy, preferably with slide film processed at a 
reliable pro shop.  Do be aware that the meter is a center spot...look at 
the shutter and notice the round white dot..that is your metering 
pattern, keep that in mind when metering.
