. My question is simply -- will I get more grain
with T3200 or Tri-X pushed two stops?

Out of the two I'd go for T3200, why not push it a stop?
My favourite 'big grain' however, is Kodak Recording Film -
TMax 3200 is grainy, but the grain is quite even and organised,
with Recording film the grain appears in great chaotic clumps which can look
great.
