Dave, I lived in Norway for over five years, and would recommend going to
Bergen for sure. There is a number of interesting sights to be seen,
including warehouses along the water front, Edvard Greig's home outside of
the city, take the railcar up the mountain overlooking the harbour. You
also should see the fruit growing regions, they should be in blossom then.
Oslo is also a very interesting city, see the Kon Tiki museum, and Frogner
Park has some very intriguing statues. May 17 is the Norwegian
Independence day, very colorful parades and celebrations to photograph.
Lillehammer, where the Olympics were held is also worth going to, and the
local beer is the best in Norway, IMHO. 
Sweden I can't speak as much about as I only travelled a bit there, but
Stockholm is beautiful, and very photogenic, the Baltic coast is very
interesting as well, some of the others on the list can tell you a lot
more, as they live there.
Denmark is less scenic, but the towns and markets would provide many photo
opportunities.
I hope you have fun on your trip, take a lot of money, as the cost of
living is quite high in relation to North America, and going out to
restaurants and clubs is expensive.
