Mushrooms/fungis are part of the French rural culture and culinary traditions. The most palatable are known by many. Yet,

Identification relies on the shape, stalk, spores, colours, ring or the absence of it, location, season, etc.

ii. French chemists/pharmacists are trained to identify fungi, and when in doubt we can always ask ours for confirmation.

iii. once those two steps have been gone through, we still have the possibility test them on my (otherwise excellent cook) mother-in-law … ;-)
