Welcome back to the States and dry land. I think the least expensive
option would be one of the digital Olympus Pen series or one of the first
Fuji digitals. Pair that with the appropriate adapter and she could use
one of your old Minolta lenses or pick up a manual 28 or 35mm lens from the
film days. Manual focus and essentially manual or aperture priority. Not
a lot of money invested and could probably be sold near what you paid.
Assign some homework on dpreview.com to find what works best for her. I
wouldn't start her out on an M8 unless she has been using your M6's in a
prior artistic endeavor.

I second Jayanand’s suggestion, and also John’s of getting her a 35mm
Voigtlander lens for the M8 if you prefer to steer her the Leica way. I
think the 65mm Elmar by itself would not be that useful, whereas a 35mm (or
a 28mm) would work much better on the M8 as an all-around lens.
