The surprise at Rasika (a term which denotes a connoisseur of Indian classical music) is mainly because "Indian Food" in the west usually means North West Indian cooking (which stretches from NW India to Lebanon in various guises), or the British take on Indian food, usually cooked by Bangladeshis. India probably has a dozen major cuisines, with more people eating them as standard home cuisine, than Italian or French, which nobody knows about!
