Central Texas doesn't have much in the way of bulky manufactured items so the trains through Austin are 3+ engines and 100+ cars rolling through with a lot of bulk cars carrying gravel or grain. A fair number of Boxcars coming up from Mexico surprisingly not on Katy. Probably because they have another set of tracks further west of Austin. The place to spot would be near Ft Worth as the legacy stockyards were where the tracks were laid.
