Canon make 2 focusing screens for the 1DS III in the 4:5 ratio, one with a black mask and one with crop lines, and I imagine these are what he used. The digital images are then printed onto 4"x5" regular b/w film negatives using a line scanner, and the prints are regular wet prints made using a 4"x5" enlarger."
