Howard, I'm a Southern boy, and have never actually tapped a tree, but I
always thought the taps had to slope down so the sap wouldn't dam up the
tap.  Then you have a fin or a hook told the bucket's bail. Right?

Of course now I think folks are using plastic tubing and setting barrels or
igloo jugs out so they won't have to tend so often.

We have sugar maples here in the Kisatchie National Forest, but I don't
think anyone messes with it, as it takes a bunch of sap to make a gallon of
syrup.  (Besides, I think the coons might raid the buckets down here.)
