On the picture commented by Ted of the childrens and the clouds on the background I saw on the EXIF data that my aperture was F13, at 1/250 ISO 320, IMO the exposure was the correct, not over neither underexposed. I've do the B&W conversion in PS Elements and Silver Efex Pro 2. I think I've choosed the profile of Across 100 but I always modify the profiles according to my vision. Sometimes I spend quite time searching the B&W I like, but I can't give precisions...., I'm sorry, I hope that this help a little. BTW your B&W pictures are wonderful converted, I think this is a question of personal preferences.
