We were working with Seitan, a wonderful glutenous meat substitute. Although I am not a vegetarian per se, I eat mainly fish and meat substitutes. Seitan generally was so good, I decided I wanted to learn how to make it. Violet, a fellow student, really threw herself into the program and gave new meaning to needing (kneading) dough.
