Regarding the ham, Bob Baron on the LEG sent me a link to an article in NYT which describes this ham perfectly: http://www.nytimes.com/2006/08/27/magazine/27wwln_consumed.html? _r=1&oref=slogin Everything they say is true. The ham I bought was 90 EUR / kg. So it is certainly not a cheap indulgence, but it is a special treat and worth every cent. I do not recall country ham in Florida. In general, I enjoy Southern food, whether a pit BBQ or Louisiana stuff. But this Spanish ham from the black pigs in Extramadura is really something special. Nathan On 27-aug-2006, at 18:33, H.
