I don't really want to rent a car, but the trains can get us to all of your suggestions so I have one more option for SWMBO which would be take a train to the areas you mentioned and see what there is. Berlin and Amsterdam would both also be of interest but I suspect that SWMBO will favor Berlin for no apparent reason.
