I try to always smile and shake their hands and so on. The conversation can go from there. I've never met an official who him/herself was personally a jerk. I've met quite a few who were clueless (Secret Service not included), and after a brief conversation ("So, what are the rules? I don't want to break the rules."; "Um, I really don't know" - that kind of thing) some of these folks were pretty conciliatory.
