Merriam Webster Unabridged is _the_ dictionary for American English and they don't even mention your spelling, dying, as acceptable. "Dieing" it is ... no variants and not vulgar. Just the proper spelling for the transitive verb "to die". No big deal. I didn't know it either. I'm glad this little discussion turned up. I learned something.
