A little while ago I had to produce a pdf fairly quickly of a book
that had been printed in the 20's. The paper was yellowed, but
consistent. Due to the fact that I had the book only a few hours, and
I needed to produce the pdf the next day, I shot jpeg and adjusted
the parameters as closely as I could to cut down on post processing.
I shot a frame of one of the blank endpapers, set the white balance
to that, boosted the contrast setting in the camera, increased the
sharpness setting slightly and shot away. A 350 page book done in 3
hours, with all the pages the same, neutral tone.
If I had wanted to balance purely for the light, I would have used a
Kodak grey card by preference, as I have some that I know are
neutral. The average white or black (or grey) card may or may not
actually be neutral. 'Black' paper can have various tones, and can
seriously throw off colour balance. White doesn't seem to have as
great variability, in my experience.
