A bit later, my wife came home with supermarket shopping, informing me that lunch was going to be a paella with our friends Assumpta and Eliot, Eliot?s son Lucas and his girlfriends, and the two dogs from the respective households. Paella (or rice, as people here simply say) is serious business here in Alicante, and my wife has recently joined a specialized cooking course devoted to this one dish?even though she has been perfectly capable of producing a decent paella for the past several years. But she seeks perfection. Today?s paella was a traditional Valencian one, with chicken and rabbit, with some veggies and snails added in.
