Jim, if you take lots of pictures with white flowers, you may want to
bracket exposure. Then you can do HDR if the flowers didn't move, or at
least manual HDR where you can copy some of the shadow or highlight over....
Or fork over big bucks to get a medium format digital back with 12 stops DR
