I should add that I don't change the EXIF on my scans at all.  What I do do 
is tag them with a lot of keywords.  I use Photo Mechanic, but you can 
definitely do the same with Bridge and probably Lightroom or Aperture. 
Anyway, I have a whole tree of keywords built up so I can very quickly tag 
photos with the camera, lens, film, developer, dev time+temp, and any other 
pertinent tags like subject name, negative number, etc.  Photo Mechanic also 
fills in other IPTC tags for me like my name, a copyright notification, web 
URL, and location of the photo (state/country).  The nice thing about this 
system is when I upload stuff to flickr it shows up in the tag area and is 
searchable.
