My favorite tripods are the Welt Safe-Locks, but the company is gone, so
they're only found used.  These have the larger tube on the bottom sliding
over the top tube and are locked by flip levers.  The model I use at work
has rubber tips on the legs, so it can be set up in water or mud almost up
to the inner slider without any liquid getting into it. With a
ball-and-socket head on top, I think they are the quickest tripods to use.
The center post has an air cushion feature, so the camera won't slam down
if the knob is loosened by accident.

It seems a shame that no one else makes such a practical design.  They are
great when you have to make quick changes in height, or need to set up and
take down in a hurry.
