Christmas in Sweden is food. Some people go to church, most of them
for the only time of the whole year.

Food. Scandinavia was a poor farming culture 100 years ago or so and
in the middle of the winter the loggers and the farmers are starting
to look lean. So the focus of Christmas food is fat. Fat and energy.

Take 1 part sugar, 1 part syrap, 1 part cream (real cream, no
cheating: 40% fat cream).

The trick is cooking it long enough, but not too long:

Too long, it turns to rock candy, to short, it doesn't firm up when it cools.
