For me, the ultimate in wedding quiet was and still is my baby Speed Graphic, using the Compur shutter in the lens rather than the focal plane shutter. Put a 120 roll-film back on that sucker and it's unbelievably silent. And then if you want to make a lot of noise to let people know that you're really taking their picture, you can use the focal-plane shutter with a Grafmatic back.

I used this in the 1960's when it wasn't even retro. Now it's deliciously quaint and brides love it.
