How about letting your temperatures diverge by say 10 degrees or so between
developer/stop/fix?

That should give some grain coagulation - or articulation - whatever it's
called. I did SOMETHING by accident once that gave substantial grain in Delta
400. I think it was a big temperature differential between developer and fix.
